And while my peppermint holiday drink in my fun red cup was delicious, I am still not over PUMPKIN. I mean why do we have to move on to peppermint just because it's December 2. I say, rebel!!!

LONG LIVE PUMPKIN!!!
So, after I got my workout in and the baby was still napping, I decided to whip up some pumpkin granola to have on hand for a quick snack or to top a smoothie bowl for breakfast/lunch.

Part of my FITmas challenge for today was to make health a priority even in the midst of a crazy busy, fast-paced holiday schedule.

This pumpkin granola is another perfect way to do just that - in addition to vitamins and smoothies.

I did a live Facebook video while I made the granola and promised I would post the recipe here on the blog. Wanted to be true to my word, so whether you watched the video or not, here is the promised recipe:

I do want to give credit to the site where I found this recipe back in October when I was making jars of pumpkin granola as a fundraiser for Lawrence's trip to Ethiopia. I only wish I could make up a recipe this tasty myself!

And I don't care if the rest of the world has moved on to peppermint, I am going to be loyal and true to my good friend PUMPKIN.
Shhhhh...don't tell her we made white chocolate peppermint popcorn last night for our Advent activity. We sure enjoyed our snack while we watched Charlie Brown Christmas! We haven't drawn our slip from the Advent Jar yet today. I wonder what fun we will have tonight?! Maybe we can nibble on our pumpkin granola while we do our activity...
